The Patron Cabernet Shiraz

Taltarni The Patron Cabernet Shiraz is the hero of the Taltarni range. It blends Cabernet Sauvignon and Shiraz from specially selected sites on the estate vineyard in the Pyrenees.
The winemaking begins in the vineyard, including 'green harvesting' some of the fruit. This allows the fruit left on the vine to become even more concentrated.
Each variety is harvested separately – often several weeks apart – then combined for co-fermentation. The fruit is allowed to warm and initiate fermentation naturally.
The ferment is completed over the next 12 days. A further four weeks on skins follows, extracting supple tannins and melding the flavour profiles of the Cabernet and Shiraz, something simple blending does not do.
The wine is then pressed to French oak barrels, two thirds new, where it undergoes malolactic fermentation and is left to age for nearly two years.
Deep red purple, Taltarni The Patron Cabernet Shiraz is powerful with ripe red forest fruit flavours, toasty oak and a silky texture. Cellaring potential is 15 years.
